lol, I couldn't find hot sausage with out the casing.... sooooo.... I had to slice it open.... then sqeeeeeeeeeze it until it all came out.... (of course then I had to fry it up with some carrots, celery and onions)

well, now it has been cooked and mixed up with saffron rice and cornbread, drenched in chicken stock and is in the oven... and my cooking is nearly done until tomorrow morning when I get to show off my mad skillz and biceps lowering that 17 pound bird into boiling oil...

I live in Alabama... that's CST... but we live right near the GA boarder, and commute into GA... so we go by EST
