How to do a break away point?

I'm building a device with a vertical rail and a horizontal rail. They will be connected, either directly with tie rods, or with an L shaped bracket. When the vertical one moves up and down it will pull and push on the horizontal one. Is there some kind of junction that I can use that will break away if there is a jam. Something easy to put back on.

I think I would put a torque limiting device on the motor(vfd) so the motor would trip on a "jam"...

Yes this.  Perhaps a slip mechanism for a belt drive?

Not sure if a sensor like a garage door would work for your application too... But might
