does anyone know of any detail out there for how to plumb a sacristy sink? I know it has to go to earth, and the architect is saying that it should just be a drywell, but we're not finding any drawings / details to have something more specific to put on the drawings!

Any help would be appreciated!

I've run into this a few times. Once, it actually was causing some foundation heaving as it drained right next to the footing and the sink had a leak.

I think you can just get creative with this - think very small septic tank - or a subgrade french drain like you would use for a downspout. Please just make sure it isn't under a slab or close to a footing.
